What CELI Is

CELI is the consulting and education arm of the Chef Architect method.

CELI helps culinary leaders design concepts, standardize systems, strengthen teams, and improve operational performance — turning creative vision into the discipline that runs a real kitchen.

Where The Method Was Formed

The Chef Architect Method.

CELI is where the Chef Architect methodology was formed, taught, and applied. Drawn from our founder's book, The Chef Architect: Concept Development & Design, the method runs through every engagement CELI takes on — and through every feature Keystone's Chef Architect Studio platform, powered by Demi Chef AI, was built to support.

Technique & R&D

As an R&D professional, I draw on the combined disciplines of culinary arts and food science — Culinology — engaging sight, sound, taste, and scent to remove the boundaries between what's craveable and what's innovative. Every product is engineered to leverage current technology without losing execution reliability in real operating environments, and every menu is built to hold its own against cost pressure and margin discipline — without losing sight of seasonality, wellness, and the responsibility that comes with feeding people at scale. In practice, that R&D philosophy runs through a specific technical repertoire — the disciplines below are the actual toolkit behind the products and menus it produces.

Consulting & Executive Education

Bring the Chef Architect framework into your kitchen, directly from the author.

CELI consulting applies the Chef Architect Method to real restaurants, food brands, and culinary teams — from ideation and concept creation, through research and development, into operational refinement, and on to menu profitability, rollout systems, and the quality assurance that keeps it all running.

New Concept Development
Menu architecture, brand-to-kitchen alignment, and launch systems for a concept starting from zero.
Menu Architecture & Product Strategy
Building the menu itself as a strategic asset, not just a list of dishes.
Recipe & Spec Standardization
Plate specs, build-to cards, and sub-recipes that hold the same standard on every shift.
Operational Assessment
Kitchen workflow, purchasing and yield review, and food-cost pressure points.
Culinary Leadership Training
Executive chef coaching, brigade structure, and department development.
Turnaround & Performance Improvement
Fixing an established brand that's drifted off its own standard.
Multi-Unit Rollout Standards
The systems that keep ten locations as consistent as one.
Menu Engineering & Contribution Margin
Pricing, popularity, and profitability analyzed together, not separately.
CELI works selectively with founders, operators, restaurant groups, prepared-food brands, and culinary teams where standards, execution, and profitability need to align.
Current Projects: culinary systems and operational support for My Fit Foods in Austin. Select advisory engagements are available for restaurant groups, prepared-food brands, and hospitality operators.

Every engagement is built to hand off cleanly. Once standards, specs, and systems are in place, Chef Architect Studio becomes the platform that sustains them: the same framework, running day to day, long after the engagement ends.

Founder

Fred Raynaud — The Chef Architect behind CELI.

Fifteen years at the operations-executive level. Twenty-plus at the corporate-executive level. Twelve at the C-team level, working directly with boards and division heads on strategy and execution — and a connected family of ventures built from that record.

Fred's father, a restaurateur and cook, put a passion for the trade in front of him early. That passion was shaped under two formative mentors: Sture Andersson — a Swedish-born master chef, three-time member of Culinary Team USA, and a competitor at the Culinary Olympics — and Robert “Bob” Small, later President and CEO of Fairmont Hotels, who brought Fred onto the team that built Rancho Las Palmas into Marriott's first five-star resort. A newspaper feature on his Midwestern-cuisine work later put him in front of Walt Disney World, where he joined Victoria & Albert's at the Grand Floridian — arriving just as Bob Small started Disney's own resort division, the same mentor and the same career circling back around.
